They should be picked at the breaker stage, when the whitish fruit begins to blush at the base. In fact, they don’t ever really fully ripen on the plant! Skin is orange-ish when ripe but flesh is nearly red – quite the interesting contrast! Flavor is good, although not as rich as a regular ripe heirloom.For best storage over winter, it’s recommended to plant in July so harvests are timed closer to frosty weather. Fruits should be left unwashed and carefully stored in single layers without touching in a cool place in the house. They also may be individually wrapped in newspaper. They will ripen to a good eating stage in 2 weeks and may keep for many weeks more.
