Compared to other yardlong beans I’ve tried, this variety is far superior.Yardlong beans (also known as Chinese long beans, snake beans, or asparagus beans) are a variant of southern peas (cowpeas) that are very popular in tropical regions as they tolerate more heat and humidity than common beans. They are usually sold in bunches and chopped into inch-long pieces before cooking. Pods should be picked before they develop strings or toughen (about 12-18 inches). They have a more vegetal flavor than common beans that lends itself to special recipes. I’ve had them cooked when visiting Suriname and found them to be delicious but unique.
