This rare summer squash originated in Homs, Syria and was introduced to the United States by the Experimental Farm Network. Unlike zucchini, this plant grows prickly vines up to 12 ft long but produces an abundance of tasty fruit. Fruits are fatter and lighter-green than regular zucchini and are actually considered a marrow or kousa-type squash. Young fruits 3 in. long are very tender and buttery when steamed. Slightly larger fruits up to 7 in. long are delicious hollowed out and stuffed with a savory filling, having a toothsome texture and mild flavor that is surprisingly addictive. If fruits are allowed to enlarge further, they can be used in recipes calling for zucchini and can keep for months. Plants show remarkable powdery mildew and drought tolerance.
