Other: Pasilla Bajio is a mildly hot heirloom Mexican pepper known for its great smoky flavor. These peppers are long and thin, measuring 8″ x 1″. They start out dark green and turn to a deep glossy brown, wrinkling as they mature. Pasilla Bajio Peppers can be harvested when they are green and enjoyed fresh or cooked in salsas or sauces, stuffed, etc. Mature brown or dried peppers are spicier and are commonly used as a dried ground spice in mole sauce and many other blends.
