Say goodbye to tasteless lima beans when you try these beans from Kentucky! This variety of lima or butterbean produces a vigorous climbing vine that makes an abundance of 2.5 inch pods. It matures quicker than some at 80-90 days and matures pods over an extended period. Best picked when pods soften slightly after the meaty seeds have fully swollen. When shelled and cooked 20 minutes, they have a rich buttery flavor. At this stage the beautiful mottled seed coloration shows up in the green seeds. Similar to ‘Bill Leach’ but less sweet flavor and slightly smaller pods. If allowed to fully dry for seed, the pods will shatter and explode seeds everywhere so finish drying in mesh bags under cover! This bean is from Minnie Tallent of Clinton County, Kentucky. Lima bean love warm weather but this variety matures easily in north-central West Virginia.
