The Pigeon Pea is native to India and is a common food grain in Asia, Africa, and Latin America, having been cultivated for at least 3,500 years. They are served with rice, used in stews and soups, and in a variety of other dishes worldwide. Pigeon peas are high in protein, making them a good meat replacement in vegetarian diets. Cajanus Cajan thrives in tropical and semi-tropical climates. As a legume, it can help fix the nitrogen levels in the soil to make it more fertile and is very drought-resistant. It is increasingly used as a popular green manure crop. Pigeon peas are also used as both a food crop (dried peas, flour, or green vegetable peas) and a forage/cover crop. When combined with cereals, pigeon peas make a well-balanced human food. The dried peas may be sprouted briefly, then cooked, to offer a flavor distinct from green or dried peas.
