Brussels Winter Chervil is a gourmet heirloom European native herb that is popular in French cuisine. It is used similarly to parsley. Its fragrant leaves can be harvested at baby size or at maturity. The leaves have an anise-parsley-like flavor and are used in salads, and as a seasoning for vegetables, fish, meat, and soups. The plants are fast-growing and very cold-hardy. The ferny fragrant foliage forms a neat mound and is most productive in part shade. It also repels slugs in the garden.
