Other: Corn Salad, also known as Mache, is a wonderful heirloom herb/vegetarian option appreciated for its 3” spoon-shaped leaves that can be used raw in salads or garnishes, and are also suitable for cooking. It offers a mild, nutty flavor akin to butterhead lettuce. The leaves are soft, tender, and rich in iron and other vitamins and minerals. Originating from France, where it remains popular, Mache thrives in any soil type, displays remarkable cold and frost tolerance, and grows best in cooler temperatures. It can often withstand temperatures down to 5 degrees F. Although an annual, it is hardy enough to overwinter in many climates. Depending on the locale, it can be planted year-round, including fall plantings for a winter harvest.
